Sautéed Broccolini with Whipped Feta & Breadcrumbs

INGREDIENTS:

  • 1 bunch broccolini, washed and the bottom tips sliced off
  • 1 loaf artisan bread, such as focaccia, baguette, or Italian loaf
  • ¼ cup olive oil
  • ½ tsp red pepper flakes, divided
  • 2 cloves garlic, grated
  • juice from ½ lemon
  • ¼ cup water
  • 2 tbs beef tallow (or olive oil)
  • kosher salt
  • black pepper


Whipped Feta

  • 8oz feta cheese, crumbled
  • ⅓ – ½ cup cream
  • Juice from ½ lemon
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • ¼ – ⅓ cup olive oil

PREPARATION: 

Preheat the oven to 375°. Tear the artisan bread into small, jagged pieces and place on a
rimmed sheet pan. In a small bowl, whisk together the olive oil, ¼ tsp red pepper flakes, grated
garlic, salt and pepper. Pour over the torn bread and toss to coat evenly. Toast in the oven for 15
minutes, tossing halfway, until the bread is deeply golden and crunchy. Remove from the oven
and set aside until cool enough to handle. Using a metal measuring cup, crush the croutons into
small breadcrumbs. Alternatively, place the croutons in a bag, seal, and use a rolling pin or
kitchen mallet to crush the croutons into small, crunchy bits. Set aside.


Place a large saute pan over medium heat. Add the beef tallow and, once melted, add the
broccolini. Toss in the oil and add the lemon juice, ¼ tsp red pepper flakes, ¼ tsp salt, and ¼ tsp
black pepper. Sauté until broccolini is bright green and begins to brown in spots, 3-5 minutes.
Add the water and steam until it completely evaporates and the broccolini is just tender, 2-3
minutes more. Remove the pan from the heat and layer the broccolini on top of a bed of
whipped feta. Garnish with breadcrumbs and serve.


Whipped Feta
Combine all ingredients except for the olive oil in the bowl of a food processor. Blend until
smooth and bits of feta have completely broken down. With the blade running, pour ⅓ cup of the
olive oil through the feed tube. Taste & add additional salt, pepper, lemon juice & olive oil until
desired consistency & seasoning are met. Spread over the base of a platter, top with broccolini,
garnish with breadcrumbs, & serve.
