Labneh with Balsamic Roasted Grapes

Cook time: Approximately 30 minutes
Serves: 4 as an appetizer
INGREDIENTS:
- 1.5 cups red seedless grapes
- 1 tbs balsamic vinegar plus additional for garnish
- 1 tbs olive oil plus additional for garnish
- ¼ tsp kosher salt
- ⅛ tsp black pepper
- 1 cup labneh
- ¼ cup pistachios, crushed
- Maldon salt for garnish
- fresh thyme leaves for garnish
- celery stalks and pita bread or chips for serving
PREPERATION:
Preheat the oven to 400°. Toss the grapes with the balsamic vinegar, olive oil, salt, and pepper and place on a rimmed sheet pan. Roast for 20 minutes until the grapes have begun to shrivel and brown slightly. Scatter grapes over a bed of labneh and garnish with crushed pistachios, balsamic vinegar, olive oil, fresh thyme leaves, maldon salt, and black pepper. Serve with celery stalks and pita bread.
