Pan Fried Parsnips

Cook time: Approximately 20 minutes
Serves: 4 as a side dish
INGREDIENTS:
- 4 medium parsnips, peeled and sliced
- 4 tbs unsalted butter
- kosher salt
- black pepper
PREPERATION:
Peel parsnips and slice into ½ inch thick circles. Warm a cast iron skillet over medium heat and add the butter. Once butter is melted and beginning to foam up, add the parsnips in a single layer and season with salt and pepper. Fry in butter until golden brown and fork tender, about 8-10 minutes, flipping once halfway through. Transfer to a serving dish and enjoy.
